The Mesquite Roasted Company uses mesh baskets over open fires to roast its coffee. Controlling the roast is a tricky business of determining the perfect temperature for roasting the beans.  One of the signs that the roast is near completion is the "cracking sound" roasting beans make.

There are two definite "crack" sounds beans make when roasting.  The second crack is what we use to determine Mesquite Roasted Coffee is at the perfect roasted stage.  Listen to the sounds of the video.
